Chef Anthony first came to ISU-UP in 2015 as a part-time chef for service learning and volunteered for additional activities. In 2017, he officially joined ISU-UP as a chef for the program in Kamuli. His primary duties include maintaining high standards and food safety, safe food handling and hygiene in the kitchen and surrounding areas, collaborating with other personnel to plan, budget, and develop menus for a wide variety of activities, preparing and serving meals for visitors, students, and other organizational projects. Additional responsibilities include food costing, food presentation, maintaining supplies, maintaining and monitoring kitchen and accommodation inventories, procurement of quality food items and other essential items, inspection of all food-related supplies, and maintaining equipment. He further assists with turning on and off the generators, their fueling, and servicing.
